- Rolling pin – for crushing the Oreo cookie crumbs
- Knife for crushing and chopping the Skittles candy
Gluten-Free St Patrick’s Day Cheesecake Recipe No Bake
Ingredients
To whip up 12 of these popular gluten-free desserts, you’ll need the following ingredients:
Cheesecake crust:
- Gluten-free chocolate sandwich cookies (Oreos)
- Melted butter or plant-based butter
Filling:
- Cream cheese for the velvety smooth texture
- Vanilla
- Powdered sugar to sweeten the filling
- Lemon juice for a zesty kick
- Gluten-free Cool Whip or other GF whipped topping
- Creme filling from the gluten-free Oreos
- Green Skittles (gluten-free)
- Green food coloring (optional)
Topping:

This is my original gluten-free cheesecake no-bake recipe – tasty and delicious. The only thing that I have changed about the recipe is to swap out some of the Oreo cookies for green Skittles candy.
How to make gluten-free St Patrick’s Day Skittles cheesecake bites
- Scrape out the creme center from the Oreo cookies and set aside.
- Crush the cookies then combine the crumbs with the melted butter.
- Press the mixture into the base of 12 cupcake liners and refrigerate while you prepare the filling.
- In a mixing bowl, beat together cream cheese, powdered sugar, lemon juice, and vanilla until smooth and well combined.
- Fold in the Cool Whip, chopped green Skittles candy, and food coloring if desired.
- Spoon the cheesecake filling onto the chilled crusts and smooth the tops.
- Garnish with green Skittles and chocolate shavings.
- Allow the mini cheesecakes to set in the freezer for a few hours or overnight for best results.
- Remove from the freezer 10 minutes before serving.
