Today I’m sharing a twist on the traditional mini pizza. This recipe uses gluten-free English muffins as a crust so they’re super quick to make.
The combination of dry pepperoni and melted cheese is just so good. With its basic ingredients, this English muffin pizza gluten-free recipe can be customized to suit any taste and dietary preference. Even make it dairy-free by using plant-based cheese!

EQUIPMENT:
- Baking sheet – I like these baking sheets because they have a diamond texture which is good for heat distribution.
- Parchment paper – a quick tip is that it works great for easy cleanup!
- Serrated knife – most store-bought English muffins come pre-sliced but I make my gluten-free English muffins so use a serrated knife to cut them to prevent crushing and tearing.
INGREDIENTS:
1 Serving
- 1 1/2 English muffins (gluten-free)
- 1/4 c pasta sauce (gluten-free)
- 3/4 c shredded cheese
- 12 pieces dry pepperoni (gluten-free)
DIRECTIONS:
- Cut English muffins (if not previously cut). Place on a parchment paper-lined baking sheet.
- Spread pasta sauce on each English muffin
- Add pepperoni slices and top with shredded cheese.
- Bake at 400 F for 10 min then broil for 2-3 minutes until cheese is golden and bubbly.
VARIATIONS:
- Instead of shredded cheese use a different type of cheese. Try mozzarella, white cheddar, cheddar cheese, or plant-based cheese.
- Instead of pizza sauce, use pasta sauce, tomato sauce, or leftover meat sauce.
- Try a different type of meat. Ham and salami are great options but roasted chicken would work well too.
- Add some sweetness. I love adding a bit of pineapple to my pizzas! It’s a great way to balance the salt and fat.
- Make it vegetarian by skipping the meat and adding mushrooms, peppers, onions, tomatoes, or olives.
TIPS:
- When making your English muffin pizza gluten-free, start with a tablespoon of sauce per half. The holes in the muffins will fill up with sauce quickly so if you use too much, it may make them soggy.
- Make these simple mini pizzas ahead of time. Assemble the pizzas then refrigerate until you are ready to bake them.
