What is Reuben pizza? A Reuben pizza is a variation of the traditional Reuben sandwich made of corned beef, swiss cheese, and sauerkraut on rye bread topped with a Russian or Thousand Island dressing.
For our homemade Reuben pizza (gluten-free) recipe, we are swapping out the Swiss cheese for vegan cheese (dairy-free), making our own creamy Reuben sauce, and using a gluten-free crust! This makes the classic Reuben a gluten-free and dairy-free flavor that all of us with specific dietary preferences can enjoy!

Reuben pizza essentials:
- I love these nonstick pizza pans. They are good value for the money and easy to clean.
- Glass measuring cups are a staple in my kitchen.
- I use parchment paper for lining my pizza pan as it has holes in it.
- This pizza wheel works great for both thick and thin crusts!

Ingredients for Reuben pizza:
- Pizza crust. You can use a variety of gluten-free pizza crusts for this recipe. From Pre-made frozen crusts to pizza dough mixes, homemade crusts, and my spaghetti squash pizza crust, they all work very well as long as they are precooked before adding the toppings.
- Cheese or vegan cheese shreds for dairy-free – I use Violife shredded cheese but the traditional Reuben sandwich is made with Swiss cheese.
- Sauerkraut. This finely cut raw fermented cabbage can be homemade or purchased ready to use.
- Corned beef or a suitable alternative works well on this pizza.
- Reuben sauce or a Thousand Island dressing.
Gluten-Free Crust options:
Individuals with gluten sensitivities or celiac disease need to make this pizza with a gluten-free crust. Allergen-friendly crusts are often made with alternative gluten-free flours and ingredients to replicate the texture and taste of traditional pizza crusts.
I like to bake my gluten-free crust before adding the toppings to avoid it getting soggy. Here are some gluten-free crust options that you can try:
- Pre-made crust or a pre-made pizza. I use pre-made gluten-free frozen crusts or premade pizzas like the Daiya, Frozen, Dairy-Free Cheeze Lovers Gluten-Free Vegan Pizza. They are a quick and easy solution to a weeknight dinner!
- Make your gluten-free flour-based crust with a pizza crust mix.
- Try my spaghetti squash pizza crust that’s also dairy-free. It’s a lighter and healthier version of a traditional pizza crust.
- Roll a gluten-free pizza dough like this one into whatever shape you need to fit your pizza pan.
How to make Reuben pizza:
Here are the step-by-step instructions for making this gluten-free Reuben pizza from preparing the ingredients, assembling the toppings, and baking the pizza to perfection.
- Gather all ingredients and preheat oven to 350ºF.
- Precook gluten-free crust according to package instructions (see gluten-free crust options).
- Drain sauerkraut and measure the cheese then set aside.
- Cut the meat into 1/2-inch pieces.

- Spread the shredded cheese on the pre-cooked crust.

- Top with the sauerkraut.

- Then add the meat.

- Drizzle with the Reuben sauce.

- Bake for 20 minutes. Cheese should be melting and meat should be browning on the top.

Reuben pizza-making tips:
- Make sure you pre-cook your gluten-free crust to keep it crispy. If you’re worried about overcooking it, broil the pizza toppings to melt the cheese and brown the meat.
- Prevent a soggy crust by draining the sauerkraut well and not overloading the pizza with toppings.
- Make a lighter and healthier version by using this spaghetti squash pizza crust recipe instead of a flour-based crust.
- This type of pizza is a meal on its own but can be served with a side salad as well
Variations:
Want to add extra ingredients or change up the flavor profile while still maintaining the essence of the Reuben sandwich in this gluten-free Reuben pizza? Try these variations:
- Add Swiss, Munster, provolone, or mozzarella cheese as they are mild tasting and will complement the beef and sauerkraut flavors. Check for dairy-free versions if required.
- Use pastrami or ham instead of corned beef. If you’re vegan choose a vegan pastrami.
- Choose a unique sauerkraut flavor. Instead of using an old-fashioned sauerkraut made of thinly sliced cabbage and salt, choose a unique variety like beet sauerkraut or a dill and caraway version with its nice combination of spices.
- Try a bottled dressing. I prefer my homemade Reuben dressing but you could also use a Thousand Island dressing to give a sweet twist or a Russian dressing for a spicier flavor.
- Rinse the canned sauerkraut in water then drain well before using to reduce sodium content.
