I love making these Sweet and Spicy Thai Chickpeas for lunch on those days when I’m busy as they taste super indulgent and are great for a quick and easy meal.

All I have to do is add a bit of leftover meat, rice, and some veggies (love how sticky the sauce is!). If you’re vegan, try serving it with a bowl of basmati rice and a side salad.
