  • Mixing bowls – I use glass mixing bowls like these for all of my baking.
  • Wooden spoon
  • Spatula
  • Medium cookie scoop – gives you the perfect-sized cookie.
  • Baking sheets
  • Parchment paper
  • Wire rack for cooling
  • Airtight container for storage

Chocolate Cake Mix Cookies:

Ingredients:

Here’s your list of ingredients for these simple homemade cookies.

  • Chocolate cake mix (gluten-free)
  • Eggs
  • Vanilla
  • Butter – plant-based or regular butter works equally well
  • Chocolate chips – I use Enjoy Life Mini Chips as they are gluten-free and dairy-free but you can use regular chocolate chips instead.
  • Red Valentine candy – Skittles are gluten-free so I used red Skittles for this cookie recipe but if you have another red gluten-free candy I’m sure it would work too!

Instructions:

  1. Line baking sheets with parchment paper and preheat oven to 350 degrees F (177 C).
  2. Add cake mix, eggs, vanilla, melted butter, and chocolate chips to a large bowl.

  1. Stir until combined. The batter will be thick but that’s ok!

  1. Scoop batter onto parchment paper lined baking sheet using a cookie scoop. Make sure you leave lots of room for them to spread out! (I use a smaller baking tray and bake six cookies at a time)

  1. Top each cookie with candy.

  1. Bake for 16-18 minutes. Let cool on the baking sheet for 5 minutes before transferring to a cooling rack. Tip: slide the whole sheet of parchment paper onto the cooling rack rather than moving each cookie.

  1. Store in an airtight container at room temperature for up to 3 days. Can be refrigerated.

Alternate ingredients:

  • If you’re not gluten-free, use a regular chocolate cake mix instead of a gluten-free cake mix.
  • Plant-based butter can easily replace regular butter in this recipe.
  • I used gluten-free Skittles in these cookies but you could use any red candy to capture the Valentine’s Day theme!

Tips & tricks:

  • Don’t overcrowd the cookies on the cookie sheet – they need room to spread out. I bake 6 cookies per pan.
  • Store these chocolate cake mix cookies in an airtight container for up to three days at room temperature.
  • It’s easier to slide the whole sheet of parchment paper with the cookies onto the cooling rack rather than moving each cookie after they have cooled for 5 minutes.
  • For even baking – I rotate the pan of cookies in my oven after 10 minutes, but this step is optional.

Ingredients

  • 1 (14 oz) (400g) box Chocolate Cake Mix (gluten-free)
  • 2 eggs
  • 2 tsp vanilla
  • 1/3 cup butter
  • 1/3 cup chocolate chips (gluten-free)
  • 1/2 cup Skittles red candy (gluten-free)
