Growing up my mom always made the best strawberry topping! She had a strawberry compote recipe with rhubarb that she served with pancakes, as an ice cream topping, and as a homemade strawberry sauce for her angel food cake.
I remember walking through her little strawberry patch gathering all the strawberries we could carry! Many of my favorite strawberry recipes come from the fresh fruit we picked on the farm.

Strawberry season is my favorite! We spent many summers on the farm picking strawberries that were perfect for making strawberry sauce for cheesecakes, strawberry puree recipes, and of course, delicious toppings for pancakes!

Supplies
Before you make this recipe, gather these supplies.
- Measuring cups and spoons
- Small bowl – I use small prep bowls to measure everything out before I start as this sauce comes together quickly!
- Whisk
- Medium saucepan – to cook the sauce
- Spoon – I like using wooden spoons for making this topping and they work well with non-stick cookware too.
Ingredients
Here’s a checklist of simple ingredients you’ll need to make this easy recipe.
Makes approximately 1 cup of sauce.
- Strawberries – I often use frozen berries but fresh strawberries will work too.
- Sugar adds a bit of sweetness
- Cornstarch is the thickener I use as it’s suitable for those of us with gluten sensitivities
- Water
- Lemon juice – provides a tangy note
- Cinnamon (optional) – adds warmth and depth to the dessert topping
How to make the strawberry sauce
- Cut the strawberries into small pieces.
- Add the sugar, cornstarch, and cinnamon to a medium saucepan and stir to combine.
- Whisk in water and lemon juice.
- Add the chopped strawberries.
- Cook over medium heat until thick, (2-3 minutes) stirring frequently.
Use my Strawberry Sauce Recipe as a delicious topping for pound cake or with maple syrup over gluten-free mini sourdough discard pancakes! You will need sourdough discard, buckwheat flour, milk, sugar, egg, and oil.
Tips and tricks
- The sauce comes together quickly so pre-measure all your ingredients and have them ready to go. I use these little prep dishes to help me stay organized.
- For a thicker sauce, cook on low for a few minutes longer to allow more water to evaporate.
- This recipe makes about 1 cup, it can easily be doubled to make more.
- For a smoother sauce, remove from heat and use an immersion blender.
- If it’s not sweet enough, add a bit more sugar and stir until dissolved.
- Keep the sauce warm for serving, or cool it and refrigerate in an airtight container for up to 1 week.
- Freeze leftover strawberry sauce for 1-2 months in a freezer-friendly container. Then, thaw and reheat in the microwave before use.
Substitutions
This is an easy recipe to make and it always turns out delicious, even with the following variations!
- Use frozen strawberries for fresh berries or a combination of fresh and frozen.
- Eliminate the cinnamon or substitute ginger for the cinnamon.
- Add a pinch of nutmeg for a nutty, slightly sweet flavor.
- Granulated sugar is preferred but brown sugar may be used in a pinch.
- Use half-blueberries instead of ripe strawberries.
- Add lemon zest on top for some color and extra flavor.
- Add strawberry ice cream or gluten-free cool whip topping and make it a dessert!
- Use it as a topping for french toast casserole.
- Make a black forest cake-inspired desert by pouring it over chocolate cupcakes with cream cheese icing!
