Growing up my mom always made the best strawberry topping! She had a strawberry compote recipe with rhubarb that she served with pancakes, as an ice cream topping, and as a homemade strawberry sauce for her angel food cake.

I remember walking through her little strawberry patch gathering all the strawberries we could carry! Many of my favorite strawberry recipes come from the fresh fruit we picked on the farm.

Strawberry season is my favorite! We spent many summers on the farm picking strawberries that were perfect for making strawberry sauce for cheesecakes, strawberry puree recipes, and of course, delicious toppings for pancakes!

  • Medium saucepan – to cook the sauce
  • Spoon – I like using wooden spoons for making this topping and they work well with non-stick cookware too.

Here’s a checklist of simple ingredients you’ll need to make this easy recipe.

Makes approximately 1 cup of sauce.

  • Strawberries – I often use frozen berries but fresh strawberries will work too.
  • Sugar adds a bit of sweetness
  • Cornstarch is the thickener I use as it’s suitable for those of us with gluten sensitivities
  • Water
  • Lemon juice – provides a tangy note
  • Cinnamon (optional) – adds warmth and depth to the dessert topping

How to make the strawberry sauce

  1. Cut the strawberries into small pieces.

  1. Add the sugar, cornstarch, and cinnamon to a medium saucepan and stir to combine.

Use my Strawberry Sauce Recipe as a delicious topping for pound cake or with maple syrup over gluten-free mini sourdough discard pancakes! You will need sourdough discard, buckwheat flour, milk, sugar, egg, and oil.

Tips and tricks

  • The sauce comes together quickly so pre-measure all your ingredients and have them ready to go. I use these little prep dishes to help me stay organized.
  • For a thicker sauce, cook on low for a few minutes longer to allow more water to evaporate.
  • This recipe makes about 1 cup, it can easily be doubled to make more.
  • For a smoother sauce, remove from heat and use an immersion blender.
  • If it’s not sweet enough, add a bit more sugar and stir until dissolved.

  • Use frozen strawberries for fresh berries or a combination of fresh and frozen.

  • Granulated sugar is preferred but brown sugar may be used in a pinch.
