What makes these burgers special is the ground beef. It’s mixed with ground pork and perfectly seasoned with garlic powder, black pepper, and sea salt. The raw bacon is chopped and mixed in then, they’re cooked to perfection over medium heat -delicious!
Our favorite way to eat them is on a gluten-free bun topped with cheddar cheese, caramelized onions, and sautéed mushrooms.
Burger-Making Essentials
- Large bowl for mixing the burger meat
- Small prep bowls for measuring spices
- Measuring cups and spoons
- Burger press or patty maker
- Kitchen scale or a 4 oz Ice Cream/Cookie Dough Scoop
- Airtight container to store leftovers
Ingredients
- Ground beef – naturally gluten-free
- Ground pork-naturally gluten-free
- Raw bacon, chopped
- Gluten-free panko breadcrumbs – I like using Kikkoman gluten-free panko but any brand will work for this recipe.
- Worcestershire sauce (gluten-free) – adds a tangy flavor to the burgers
- Garlic powder or chopped garlic
- Onion
- Eggs
- Gluten-free burger buns or alternatives (see below)
- Black pepper
- Salt
- Optional toppings like red onion, lettuce leaves, tomato, cheese, pickles, etc.
Adding the bacon fat (from the raw bacon) and the ground pork to the lean ground meat increases the fat content, ensuring a juicy burger that doesn’t dry out when cooked.
The best way to cook these burger patties is on the barbecue. But I’ve also cooked them over medium-high heat in a large skillet or in the air fryer.
Gluten-Fee Burger Bun Alternatives
This is one of my favorite recipes because the burgers are gluten-free even without the bun! I’ve enjoyed the cooked burgers alone, on top of a salad, or as a sandwich in lettuce wraps with Swiss cheese and a tasty BBQ sauce.
I’ve also crumbled the leftover burgers and added them to my favorite soup. They can also be added to your favorite gluten-free bacon cheeseburger pasta recipe.
When the spinach is ready in the garden, I like using the large leaves as a healthy hamburger bun option. You could also try portobello mushrooms as a gluten-free bun for juicy burgers.

Serving suggestions
Our whole family loves these burgers! Especially served with a side of fries or these easy smashed potatoes. You could also try sweet potato fries, a summer corn salad, corn on the cob with homemade sauce, or some grilled vegetables drizzled with avocado oil.
Add a non-alcoholic beverage like freshly squeezed lemonade, iced tea, or sparkling water. Or, even a crisp white wine like Sauvignon Blanc or a gluten-free craft beer! They all will complement the rich flavors of this gluten-free beef and bacon burger.
Variations
This recipe tastes delicious just the way it is. But, here are some substitutes to try.
- Substitute ground pork belly for ground pork or bacon.
- Grass-fed ground beef can be used instead of regular beef mince – both will make a good burger
- Use gluten-free oatmeal instead of the panko breadcrumbs. Always check the packaging to avoid cross contamination.
- Add some brown sugar to the meat mix for a sweet taste.
- Instead of garlic powder, use minced garlic in a jar or chopped fresh garlic.
- Finely chop some onions to add to the meat mixture.
Tips & Tricks
- To keep burgers tender and juicy – do not overmix the meat when making patties. A gentle mix is all that is needed.
- When grilling, do not move the burgers around! Cook on one side for 3-4 minutes then flip and cook on the other side until done.
- Store leftovers in an airtight container in the fridge.
- Raw hamburger patties can be frozen in a single layer on parchment paper or a foil-lined cookie sheet. Store in Ziploc bags in the freezer.
- When cooking frozen patties, allow more cooking time per side. Cook until the internal temperature is 160 degrees F.
- To keep this recipe dairy-free, top the burger with vegan cheese. Get it to melt on the hamburger patty by microwaving it on top of the burger for 20-30 seconds before putting it on the bun!
